My favourite dish from the restaurant is the savoury cheesecake with beetroot and once I realised it’s not as complicated to cook as I thought it might be I had to have a go – it was a lot of fun to make and tasted fantastic, I’ve cooked it several times now. And then I discovered the butternut squash with ginger tomatoes and lime yogurt … cooked so slowly, the flavours are sublime.
