Chopped Kale Salad with Nectarines

This recipe has a wealth of healthy ingredients which we love for the new year! 


Chopped Kale Salad with Nectarines

Serves 2

I N G R E D I E N  T S

10 stalks of lacinato kale
1 tablespoon extra virgin olive oil
1 tablespoon fresh lime juice
1/2 teaspoon sea salt
1 cup shredded red cabbage
1 cup shredded green cabbage
1 nectarine sliced into thin pieces {peaches, plums or cherries would also work}
small handful chopped fresh cilantro
large handful chopped parsley, I actually used the tops of the carrots from my CSA box – cousin of the parsley plant
1/4 cup sliced red onion

M E T H O D

Wash, dry and remove the ribs from the kale and cut it into finely shredded pieces. Toss the kale in a large bowl with the olive oil, lime juice and sea salt. Massage it, with your hands for about 3 minutes.

Then add in the red and green cabbage, nectarine, cilantro, parsley and red onion and combine well.

Drizzle on the dressing {see below} and serve.

For the dressing;

Makes 1/4 cup!

I N G R E D I E N T S

2 tablespoons fresh lime juice
2 tablespoons of extra virgin olive oil
1 tablespoon apple cider vinegar
zest from 1 lime
1/2 teaspoon sea salt
heavy pinch of black pepper

M E T H O D 

Combine all the ingredients in a small bowl and whisk for about 15 seconds.
