You can’t beat homemade soup for taste and flavour, it really doesn’t take long to whizz together and it’s definitely worth it so here’s one of our favourites.
The zesty limes give this soup a sunny uplifting flavour, and it's bursting with healthy goodness - perfect for when we're ready for summer but the weather is not quite there yet...
Sweet Potato, Lime and Ginger Soup
I N G R E D I E N T S
3 tbsp olive oil
2 onions, skinned and chopped
About 5 cm fresh root ginger, skinned and chopped
1 clove garlic, peeled and chopped
4 sweet potatoes, peeled and chopped
900ml - 1.1 litre chicken or vegetable stock
Juice of 2 limes
225 ml creme fraiche
M E T H O D
Heat the oil in a large saucepan and cook the onions until they are soft and translucent, add the ginger and garlic and cook for another couple of minutes.
Add the sweet potatoes and cook for about 10 mins, stirring occasionally to prevent them sticking (the longer you cook the sweet potatoes the better the result will be).
Stir in the stock and simmer gently until the sweet potato is quite soft.
Leave to cool a little, liquidize with the lime juice and creme fraiche.
Pour into your favourite bowl and enjoy!
